We were so fortunate to experience no unusual delays and wonderful weather. We only got lost in Jersey once but luckily my 5 years of nationwide installations knowledge base and a Hilton saved the day. We also relived our college glory days by stopping in at what was probably one of the scummiest bars I've ever been into in my entire life for a few post wedding salutes with friends. (For the record, I've been in alot of bars in my 27 years-this one took the cake for sure lol.) Definitely served as validation for how far I have come in life. Seriously though, what good times!
Anyway, when I was growing up Mom would also stockpile the car with goodies for our family vacation road trips and I guess that trait passed on through me. In the end, it really does save a ton of money (and time because of less stops given I'm hungry every hour!). Although being my age and seemingly the pounds go on faster and off slower, I try to be very conscientious of what we pack. I'm a huge fan of Pinterest and found this recipe and decided to give it a go. It also reminded me of a lighter version of the no bake chocolate cookies Gram used to make. Although they average around 135 calories per, it took just one to fill me up enough to hold me over until "real" mealtime. Plus I'd rather eat 135 calories of something compiled of fresh ingredients that I made than some pre-packaged preservative loaded 100 calorie pack any old day. I also found that when we were running around non-stop once we arrived, they were a great way to keep my blood sugar from dropping (which it notoriously will do at the most inopportune time). I must remember to make these for my wedding day.
Ingredients:
- 1 cup (dry) oatmeal (I used old-fashioned oats)
- 1 cup toasted coconut flakes
- 1/2 cup chocolate chips
- 1/2 cup peanut butter
- 1/2 cup ground flaxseed
- 1/3 cup honey
- 1 tsp. vanilla
Stir all ingredients together in a medium bowl until thoroughly mixed. Let chill in the refrigerator for half an hour. Once chilled, roll into balls of whatever size you would like. (Mine were about 1″ in diameter.) Store in an airtight container and keep refrigerated for up to 1 week.
Makes about 20-25 balls.
Helpful hints: Spray the spoon you use to mix the ingredients and your hands before you roll them so nothing will stick to you or your spoon
