Favorite "Got Home Late from Work, Really Hungry, but Don't Want to Cook or Eat Fast Food" Recipe

With busy season at work consuming my life, I've been resorting to what I call my Favorite "got home late from work, really hungry, but don't want to cook or eat fast food" recipe. And as an additional benefit, the health factor is much higher than many of the usual quick alternatives.


I hope you will give it a try! :)


Tomato and Mozzarella Salad:
1 small tomato-chopped (or 1/4 can of diced tomatoes drained and rinsed)
1/8 cup of Fresh Mozzarella Cheese-chopped
1/8 cup of white or red onion-chopped
1-1/2 tbsp of EVOO
3 Slices of Garlic Bread
Italian Seasoning (Parsley, Thyme, Rosemary, Garlic, Basil)
Salt and Pepper

Place slices of bread onto a cookie sheet and put into over-turn onto Broil.
Rough chop tomato, cheese, onion and place into bowl. Remove bread from oven once golden brown and crunchy. Leave whole or break into crouton size. Drizzle EVOO over everything, season to taste, and mix together.

Total time = about 6 minutes.
